How to: Microwave Bacon

One thing I don't love about cooking blogs is when the author gets too in-deep with the personal stories. Know what I mean? It's like - all you want is to know how to cook crispy bacon in the microwave in one easy step, and to get to the info you have to read through an homage to, like, some random dog's birthday, you know? Well, guess what. My ... view more

Loaded baked potato quiche ~ by My Utensil Crock

Just in case you were looking for a delicious way to mesh eggs, vegetables, potatoes, cheese, and bacon, I present to you: the Loaded Baked Potato Crustless Quiche. If you weren't in the market for such a method, I recommend you try this anyway. Immediately after I perfected my Kale & Egg Quiche with Sweet Potato "Crust" - I could not ... view more

Glazed Meatloaves {Beef + Kale + Cheddar}

Yes, it's (still) the height of summer, and yes, I am posting about meatloaf. I love "comfort food" every day of the year, red hot blazing sun and 300% humidity be darned. What I don't need during the summer is my oven pumping away for an hour or more. These individual meatloaves take much less time to bake - only 20 minutes - and more surface ... view more

Chicken Shawarma

One of my favorite "street foods" is Chicken Shawarma. I love the thinly sliced bits of robustly flavored meat, wrapped in a warm pita or served on a bed of vegetables or rice. Traditional Chicken Shawarma is made on a large rotisserie, which I just can't replicate in my kitchen. It also is comprised of mystery pieces of chicken and seasoned ... view more

Kale and Spinach Greek Yogurt Dip

Spinach dip is always a fan favorite. And when I found Trader Joe's Reduced-Guilt Spinach and Kale Greek Yogurt Dip, I thought I had found a little plastic bucket of heaven. The ingredient list is actually pretty natural on that product - you know how I dislike extra "filler" ingredients. I could sit down and eat this dip with crackers and veggies ... view more

Chocolate Chip Oatmeal Cookies {Coconut Oil + Whole Wheat Flour}

I find that when I wait too long to post a recipe after making it, there are holes in my cooking memory. Was it in the oven for 13 or 16 minutes? How many servings did it make (= how many did I eat during the photo shoot)? Did I end up halving the nutmeg? Etc. Let's just say I didn't mind having to make this recipe a few times to fill in the ... view more
