Avocado toast. It’s all the rage.
You have probably heard of it, and you might be wondering – what is this fancy dish that everyone is talking about? You like avocado, and you like toast. But surely, there must be more to this game?
Nah. You pretty much have the hang of it already. You can add some lemon juice to the avocado for a little tang (and maybe to keep it from browning for a short while), and any toppers you would like.
Today I hosted a brunch for some girlfriends from college who live in the area, and I served this dish. Avocados are crowd-pleasers, and it will take you less than 5 minutes to serve this up. Perfect to have out to nibble on as guests arrive or while a breakfast casserole lingers in the oven. Just set up any toppers you will be serving, and set out bread and whole (uncut) avocados. When you are ready to serve, pop the bread in the toaster, and mash up the avocado and lemon with a fork. Serve in a pretty bowl with a spreader so your guests can make their own, or portion it out yourself. There are benefits to both choices! For a gluten free option, have some GF bread or crackers available.
For today’s brunch, I kept it simple, and added freshly shaved radishes in a little bowl, as an option.
Not everyone is in to radishes, but try shaving them with a vegetable peeler so they are basically translucent. Watch your fingers if the radishes are small. I was only able to shave half of my (very large) radishes before my fingertips reached the danger zone. It’s hard to get them this thin with a knife.
Radishes will add a little bitter flavor, and a lot of crunch. And beautiful color. Top your finished product with just a sprinkle of coarse salt.
- 2 avocados
- 1 t fresh lemon juice
- crusty sliced bread {I like multigrain - the grains add additional flavor to this simple dish}, toasted
- 2 radishes, shaved
- coarse salt (like sea salt)
- Mash the flesh of the avocado with the lemon juice in a bowl.
- Spread on toast, and top with a few shaved radishes.
- Sprinkle with a few grains of salt, and enjoy!
