Heat oven to 350 and line 2 large rimmed cookie sheets with silpats or parchment paper.
In a large bowl, stir together flour and cornmeal.
Add the rest of the ingredients (except the egg wash), and stir until combined.
On a lightly floured surface, roll out dough until approx. ¼" thick.
Cut into coins with 1" cookie cutter.
Place the coins on to the pans, and brush with the egg wash.
Bake for 25-30 min, or until golden brown.
Notes
Your batch may yield a different amount, but I can get more than 70 1" treats from this recipe. After you punch out a batch, just keep gathering the scraps, re-rolling, and re-punching!
