Roasted Red Pepper Dip {Greek Yogurt}

This recipe is ALL healthy stuff, and comes together in just 15 minutes, even if you are roasting the peppers from scratch.
  • 2 red peppers
  • 1 c 2% Greek yogurt
  • 3 cloves garlic, roughly chopped
  • 1 T dried basil
  • pinch of salt
  1. Roast the red peppers and separate the flesh from the skin.
  2. In a small food processor, combine the red peppers with the rest of the ingredients.
  3. Process until they are combined, scraping down the sides as necessary.
  4. It's ready to eat immediately, but can be refrigerated in a closed container for a few days, during which it will get thicker.
