Small Batch Guacamole {Chipotle Recipe}

Ingredients
  • 1 ripe Hass avocado {it should yield when you squeeze it}
  • 1 tsp fresh lime juice
  • ⅛ t kosher salt
  • 1 T cilantro, chopped
  • 2 T red onion, finely diced
  • .25 jalapeño, including seeds, finely chopped
Instructions
  1. Carefully cut the avocado in half and the remove the large pit. Squeeze the avocado into a medium bowl so you have some room to stir it up and get a little messy. You can use a fork to scoop it out, or you can just pinch from the outside of the avocado skin, working the insides into the bowl.
  2. Sprinkle the lime juice, then the salt, over the avocado.
  3. Using a fork, smash the avocado until it's smooth and the lime juice and salt are incorporated.
  4. Stir in the chopped cilantro, and the finely chopped onion and jalapeño. Stir and serve!
