Treats for Tazewell: Pumpkin Treats

  • 2 eggs
  • ½ c canned pumpkin {or homemade Pumpkin Puree}
  • 2 T dry milk
  • 2.5 c brown rice flour {have more on hand in case you need it}
  • 1 t dried parsley
  1. Preheat oven to 350.
  2. In a large bowl, whisk together eggs and pumpkin to smooth.
  3. Stir in dry milk and dried parsley
  4. Add 1 c brown rice flour and stir, and continue adding flour until it forms a stiff, dry dough.
  5. Turn out onto lightly floured surface (you can use the same brown rice flour).
  6. Knead and press to make the dough come together.
  7. Roll the dough to about ¼" inch thick. If it is thicker, you will just need to bake it for a bit longer.
  8. Use a cookie cutter to cut out shapes, working in batches.
  9. Place the treats on a cookie sheet (I cover mine with parchment paper).
  10. Bake 20 minutes. Remove from oven and turn each treat over. Bake an additional 15-20 min.
