Chicken Salad {Honey, Cranberries, Pecans, & Celery}

- 3 chicken breasts, cooked and chopped (I poached mine, but you can also use leftover roasted chicken or rotisserie chicken)
- 3 stalks celery, diced
- ½ c pecans, chopped and toasted
- ½ c dried cranberries
- ⅓ c honey
- ¾ c mayonnaise
- ¼ t kosher salt
- ¼ t freshly ground pepper
- In a large bowl, combine the chicken, celery, pecans, and cranberries.
- In a small bowl, stir together the honey, mayonnaise, salt, and pepper.
- Pour the honey mixture over the contents of the large bowl, and stir to distribute.
